Using a sous vide 'Cook-Chill-Regen' method, a chef perfectly cooks the product prior to service before chilling it down and placing it in cold-store. When required/ordered (during service) the stored product is retrieved and regenerated to the highest of standards within minutes.

Specification Sheets ensure you achieve a total consistency of finished product throughout your menu. Using these sheets either during training or the sous vide process itself, ensures accurate presentation and a consistent finish, no matter who is doing the cooking. The sheets qualify and ensure accurate cooking and presentation of the dish and offer a visual representation for easy reference. The sheets provide a full description of each dish, which can be used to aid in promoting your menus, or giving your waiting staff the knowledge to talk about them with your customers. Full details of the dish elements required to enhance the finished product can also be provided to you, along with key tasting notes.

The seasons database includes information on all UK produce.
Vegetables, Fruits, Meats and Fish are all included.
Where applicable the colour coded key highlights the months when an item is available, when it's available but not at its best, and also when the produce will be available from cold stores (likely to be poorer quality and more expensive). This information is invaluable when planning future menus by utilising the sous vide method.
